As most of you know, I’m a BzzAgent, and I absolutely love it! We get some awesome campaigns and products t review. The newest campaign I’m on is the Filippo Berio Extra Virgin Olive Oil. This awesome campaign, although yes it has to do with the oil itself, it’s about trying to live a healthier lifestyle. See alot of us use butter or margarine in our foods. Although they do taste good, they are, in fact harmful to us. We’re calling this campaign, ” The Secret to Heart Health: Live the Mediterranean Way!”
See, studies show that people living in the Mediterranean region display the lowest recorded rates of chronic diseases. These studies also show a high adult life expectancy. This is probably due to their diet. Their traditional diet eaten in this region combines generous servings of fruits, leafy greens, legumes, whole grains, olive oil and other monounsaturated oils and fish. They also eat small amounts of red meat and wine in moderation. Meal times are also family gatherings and much laughter is and conversations are ensued. They are a happy healthy people. I’ve seen this up close and personal when I went to Italy to visit my grandmother and aunts. Now with the right ingredients I can incorporate this into my family’s lifestyle as well.
I was absolutely excited to be picked for this one, because, one I’m Italian, and two, I love olive oil! With the BzzPack, I received one 8oz Bottle of Filippo Berio Extra Virgin Olive Oil, a recipe card, a magic jar opener with the Filippo Berio logo, a brochure about the Secret to Heart Health, and coupons! Who doesn’t love coupons? My recipe card had the recipe for Spaghetti and Shrimp. YUM! I couldn’t wait to try it, nor could my husband! So on Sunday, when I came home I made the recipe. This is how it goes:
1 tsp (or more) of dried red pepper flakes
1 lg garlic clove peeled (I used 4 we love our garlic)
2 tbsp flat leaf parsley
1 tbsp fresh mint leaves (We used basil, some of us are allergic to mint)
Zest and juice of 1 lemon
Salt (to taste)
1 lb frozen or fresh medium shrimp
2 tsp Filippo Berio Extra Virgin Olive Oil
1 cup frozen chopped broccoli or spinach (I used mixed veggies)
6 cherry tomatoes cut in half (I only had big fresh tomatoes)
1 lb spaghetti cut in half or smaller
1/4 cup of the spaghetti water reserved
Coarse black pepper (to taste)
1. Mince red pepper flakes, garlic, parsley, mint (or basil) together. Add to a large bowl. Stir in zest, lemon juice, salt. Toss in shrimp and allow to marinate for 5 minutes.
2. Heat olive oil over medium high heat in a large saute pan. When olive oil is hot, stir in shrimp and cook 2 minutes, or until slightly pink. Add broccoli or whatever other veggies you have chosen, and cook 1 minute. Stir in tomatoes and cook 1 minute longer. Remove from heat and keep warm.
3. Cook spaghetti according to package direction, Reserve 1/4 cup of cooking water, drain spaghetti. Add spaghetti and reserved water to the shrimp and veggies in the pan. Reheat quickly until everything is hot. Season with salt and pepper. Serve.
This is my finished recipe. I topped it with Grated Fresh Mozzarella and a sprig of fresh Italian Flat Leaf Parsley. It was absolutely delicious. The olive oil didn’t take away from any of the other flavors, in fact it only enhanced them. It was very filling and even my 6 year old enjoyed it! He said it smelled too good not to try it. It was his first time eating shrimp! This is not only a delicious meal but also a very healthy dish!
